Scrambled Eggs!!

So Ashlyn made me these delicious scrambled eggs on Saturday which consisted of Mexican cheese, red bell peppers, onion, salt and pepper. She really did amaze herself because she didn't think she was going to make such a delicious breakfast. I was so proud of her that I took a picture of her masterpiece. She dabbed a side of ketchup so I can add it for flavor, but honestly there was no need at all for ketchup because it was delicious on its own.

To think I’m not even an egg person and I absolutely enjoyed them this time around. This morning I had to show my co-workers because I was craving them again for breakfast. Who knows, my Ashlyn might be the next Julia Child, lol….

Amazing Domestic Seafood Recipe Cook Off

Ashlyn is a big seafood fan. Because of that I usually like to cook what’s called “Camarones al Ajillo”. It’s a very simple dish to make. By simply sautéing extra garlic cloves with olive oil, freshly squeezed lime juice. Of course seasoning with a bit of salt, fresh ground pepper and parsley is a must! It's a pretty excellent dish with rice, noodles, salad, veggies or just about anything you would like to compliment it with.


This recipe takes no less than 10 minutes which is helpful for mothers like me who want to make the kids something healthy and quick especially for those after school days.

I’m always up for new ideas of course and by all means if you have any suggestions and recipes, please do not hesitate to share them. I have to say, my dish is made almost everywhere in the Caribbean and it’s a very popular dish for the Latin population and it’s time everyone enjoys it too. This dish would definitely be a great contender at the Great American Seafood Cook off which is one of America’s most prestigious culinary competitions.
