Everyone has been bringing cakes, cupcakes, and chocolates. I tell you its so distracting seeing all these yummy goodies floating around the whole office. I got to admit I can’t resist temptation all the time and it’s so hard.
I been battling trying to lose a few pounds and there’s always something that gets in my way. I’m so irate right now because I stepped on the scale and I didn’t lose any weight and I didn’t gain. The good thing is that there was no weight gain, but the downfall is that a whole month passed and not a pound was shed!
Can you all keep your junk food at home people! Marcia brought some wheat bagels and I had a ½ of bagel for lunch with some cheese. Here I am thinking I’m doing so well and then I mess up with a few chocolate candies.
Uggh, I’m so annoyed right now, but I won’t even stress my life over it. I have to be stronger and if I can’t then I can’t beat myself up!

OH SO DELICIOUS FLAN
When it comes to eating I have to say my family wins the golden medal. They all absolutely have to have dessert after their meals or maybe something somewhat sweet that will be classified as a dessert, lol.
Yessie’s absolute favorite is the flan which is custard that most Hispanics know how to make. I have to say that not everyone knows how to make a delicious flan. Some people make it too watery or too sour due to the browning of the sugar to make the syrup so basically you really have to be a pro at making flan to get a high five from me!
Whether its cheese cake, ice cream, flan or any type of sweets my family are by far the greatest critics because they love their desserts to be just right!
Mofongo con Camarones
Mofongo con Camarones. This is exactly what my girls enjoy eating every time we visit the Cuban restaurant down the street from our house.
It’s basically made out of plantains and some even include pork rinds. It’s basically up to you, I mean you can make it to your likes and put whatever your heart pleases.
I do enjoy the Mofongo with the sauce, but I developed a somewhat disgust to shrimp these days and I don’t think I’ll ever eat them again. I mean I really wasn’t a fan of them anyways. I would probably eat a little nibble of one, but really never enjoyed seafood ever. My girls are the absolute opposite of me though. They devour shrimp any style!
Of course everyone makes Mofongo in variety of styles so I decided to give you a recipe I found online which is a bit different from most.
MOFONGO DE CAMARONES RECIPE
PLANTAIN DUMPLINGS STUFFED W/ SHRIMP STUFFING
2 tb extra virgin olive oil
3 lg garlic clove; peeled and
-crushed
1/4 lb smoked ham; diced
1/4 c scallion; sliced
1/4 c cilantro; roughly chopped
1/2 c olives, small; pitted
1/2 ea lime; juiced
1 c tomato puree
1 c tomato sauce
2 lb shrimp; peeled and deveined,
- and
Mofonogo
3 lg plantain; green or 6 medium
1/4 c corn oil
Instructions
Heat olive oil in a large skillet. Add the remaining stuffing
ingredients, except the shrimp, and sauté over medium heat for 5 min.
Add the shrimp and cook until they turn pink. Set aside.
Peel the plantains and cut them into 1/2" slices. Heat the corn oil in a
large skillet and fry the plantain slices until golden. Drain on paper
towels.
Mash 5-6 slices in a mortar with a little of the stuffing liquid. Fold
in 1/2 cup of the shrimp mixture and shape into a ball with your hands.
Repeat the process 5 more times.
Furry Friends
There are many sweet and caring people out there especially those who care for animals in need. I for one like to visit the nearest animal shelter because sometimes just a little quality time with them can make such a difference.
I have to admit that at many times I wish I can walk off with all of them, but the fact that I care and occasionally bring them a little something means allot. I mean an occasional unused blanket or some Clorox bleach so they can sterilize their cages those help the shelter tremendously. Things do not need to be brand new for you to donate them. My mom actually has a bag full of sheets and old towels which will be perfect to keep our furry friends comfortable and warm.
I was surfing the web and found an incredible site I would like to share with you guys. It brought tears to my eyes to learn that this one little kitten that almost had no chance in life was given a second chance thanks to this amazing woman who took her in and gave her the life she now has.

Lunch is great, but I need the treadmill!
I’m at lunch right now and guess what I’m eating? I’m eating popcorn, rice and beans with steak tips for lunch. The popcorn I guess was my appetizer, lol and the rest was leftovers from the dinner my honey made last night.
I’m going to try and eat just a little bit because seriously if I keep this up I’ll gain the little weight I’ve lost and seriously it wasn’t much.

I actually bought a prepaid phone card to call Melissa in Mexico. She’s been in Mexico since Sunday and I figured surprising her by calling to find out how much fun her and Ashley are having.

You can get a prepaid phone card to call absolutely anywhere international ranging from Europe, Asia and the Middle East. You can basically just search for the best phone cards to call from the United States to anywhere in the world without breaking the bank.
What I like is the fact that these are large companies like AT&T, sprint and many more that are absolutely reliable and you get your moneys worth!
I want to tell you that my girls absolutely love these cards because they can keep in touch with their family in Puerto Rico and the Dominican Republic and my phone bill will never be ridiculous. I usually get them a calling card each every month and it’s paid for and I don’t have to worry about it again until the following month.
Moist and Delicious
Rose brought me some cake and it was delicious. She baked it herself. No long ago she made meatballs and they were so yummy I almost took more from her plate!
What I loved about the cake was that it wasn’t over sweet and it was so moist you didn’t even care for milk or anything. I do wish she had put more frosting since that is my absolute favorite part of cake.
I can’t believe she has energy for baking being pregnant and having to care for Connor and he’s a busy toddler. I am grateful that she still manages to do so because otherwise I wouldn’t get the treats!
